Peaches are at their ripest in the summer months. While the versatile fruit is delicious on its own, it can also star in every meal of the day. From the savory to the sweet, here are five fresh ideas featuring the summertime staple. —Karen Palmer
PEACH PANCAKES One surefire way to jazz up everyday pancakes is to grace them with spiced peaches. For the ultimate breakfast indulgence, thinly slice two peaches, then soften them by cooking them in a pan with butter and a hefty sprinkling of brown sugar for a few minutes. Prepare your pancake mix according to its instructions, pour the batter on a griddle, and add a few cooked peach slices to each pancake. Serve with good-quality maple syrup and unsalted butter.
SLICED-PEACH, PROSCUITTO, AND MOZZARELLA SALAD Hot days call for cool salads—and this one is no exception. Top your favorite greens with sliced peaches, strips of prosciutto, and pieces of fresh mozzarella cheese, then dress with a simple lemon and olive oil vinaigrette. Serve it with some crusty bread—and a glass of white wine.
PEACH SALSA Ditch the traditional tomato salsa, and try a punchy summertime peach salsa. To whip up a batch, peel and finely chop three peaches, and combine with ½ cup of finely chopped sweet onion and two tablespoons of chopped fresh cilantro. If you’d like to add some heat, add one seeded, chopped jalapeno pepper. Season the mixture with a dash of salt and pepper and the juice of one lime, and voila! You’ve got a new salsa for your favorite whole-wheat or pita chips.
GRILLED PEACHES Summer entertaining is all about grilling, and no-fuss peaches off the barbecue are the perfect accompaniment to your favorite chicken or fish dish. Simply split the peaches, remove the pit and brush all over with olive oil before placing on the grill. Cook the peaches, turning occasionally, for about eight minutes or until tender.
PEACH CRUMBLE Nothing could be easier—or a more perfect ending to a meal—than a hot-from-the-oven peach crumble. To make this peachy-keen dessert, blend two cups each of flour and sugar, a dash of salt, and a stick (8 tablespoons) of cold unsalted butter in your food processor until the mixture clumps together. Slice two pounds of peaches, place them in a small baking dish, and top them with crumbles of the sugar mixture and a handful of your favorite chopped nuts. Bake at 425 degrees for 25 to 30 minutes, let it cool for a few moments, then serve in bowls with a big scoop of vanilla ice cream. Congratulations. You’ve officially experienced peach perfection.
